Tu B'Shvat Seder

Tu B'Shvat, the fifteenth day of the Hebrew month of Shvat, celebrated this year beginning the evening of Sunday, January 20, was identified by Talmudic sages as "The New Year for Trees" and is a unique date in the Jewish calendar. Kabbalists living in the Israeli city of Tzfat about five hundred years ago instituted the custom of a Tu B'Shvat Seder as an exploration of the Jewish perspective on nature, the physical world, and our place in it as people.
Our Tu B'Shvat Seder at Whole Foods will follow the order outlined by the Jewish mystics, the spiritual masters of Tzfat, and will include stories, teachings from the Torah and the Talmud, lively discussion, and a catered dinner that incorporates the seven species of Israel: wheat, barley, grapes, figs, pomegranates, olives, and dates. As the mystics taught, we will consider the properties of various fruits and practice mindful eating as part of our celebration.

In the hour when the Holy One created the first person, G-d showed His creation the trees in the Garden of Eden, and said: "See My works, how fine they are; now all that I have created, I created for your benefit. Think upon this and do not corrupt and destroy My world. For if you destroy it, there is no one to restore it after you." (Ecclesiastes Rabbah 7:28)

Jordona Kohn attended Queens College and graduated with a Bachelor’s degree in Education. She then went on to attend culinary school at Le Cordon Bleu of Dallas, earning the honor of Valedictorian and graduating with a Bachelors in Culinary Arts and Hospitality. She has been working in the food industry for the last 13 years, but she’s been exposed to food all her life; it is in her blood. Her Great Grandfather, Grandfather, and Father were all kosher butchers and her Father was a restaurant owner for a time.
Jordona has worked in the food world in Miami, New York, Baltimore, Jerusalem, and now, Dallas.

Jordona started gaining traction in the Dallas kosher scene as the executive chef at A Taste of the World Catering.
Soon after, the Dallas Jewish Monthly magazine reached out to her about starting the kosher food column, which she now writes for as the main food columnist. Jordona's goal has always been to start her own restaurant, in the coming months, G-d willing, Jordona, along with her partner Stacy Clark, will be opening a new kosher dairy cafe here in Dallas called "The Market".
